In a city known for its iconic skyline and vibrant Broadway shows, Arnold Wilkerson made a unique transition—from performing on the stage to crafting some of New York’s most beloved pies.
Founder of Little Pie Company, Arnold’s journey is a testament to the creative spirit and dedication required in both theater and entrepreneurship.
In this interview, we explore how his acting background helped shape his approach to running a bakery that has stood the test of time for over three decades.
Acting Techniques in the Kitchen
When asked how his experience in theater influenced his baking career, Arnold reflected on the similarities between the two. “One essential thing they teach in acting school is technique,” he said. “Sometimes a stage actor may not truly feel the role they are given to play, but the audience must be convinced they’ve seen a great performance. Whether it comes from the heart or from a skilled technician, the audience sees dedication.”
Theater instilled in him a sense of discipline and respect for the craft, skills that translated seamlessly into running a successful bakery. From being on time and prepared to recognizing and nurturing the talents of his team, Arnold emphasized that these values are the foundation of Little Pie Company’s enduring success. “We’ve been fortunate to assemble a team of gifted and talented people, including some who have been with us for nearly forty years,” he said with pride.
Passion and Creativity After 30 Years
After more than three decades in the business, Arnold’s passion for baking remains as fresh as ever. He credits New York City for keeping his imagination alive. “I come from a background that taught me the importance of being the best at whatever task I was given. New York challenged me to explore my creativity beyond theater,” he explained.
In the late 1980s, as America was rediscovering the beauty of home-cooked, nostalgic foods, Arnold jumped on board. “We were reminded how fortunate we were to have been part of families that took fresh fruit and turned it into delicious cobblers and desserts. Sharing that experience never grows tiring.”
The Power of Fresh Ingredients
Little Pie Company’s commitment to using fresh ingredients is a hallmark of their brand. For Arnold, the value of freshness goes beyond taste; it’s about preserving the integrity of handmade craftsmanship. “We live in a time of processed foods and automation. That has its place, but when something is made fresh, by hand, the spirit of the person is felt. That’s why we hand crimp our crusts and use fresh fruit,” he shared.
This hands-on approach ensures that every pie carries the essence of the bakers who made it, reinforcing Little Pie Company’s identity in an increasingly automated world.
A Neighborhood Fixture
Community engagement has been a central part of Little Pie Company’s model since its inception. “Forty years at the same location has allowed us to hire many of the neighborhood’s young people and help educate them. For many of them, it’s their first job,” Arnold said. One of those local hires is now the company’s vice president, Danny Garcia.
The company’s longstanding presence in the theater district has also allowed it to remain a fixture of local events and activities, further cementing its role in the neighborhood.
With pies ranging from Fresh Georgia Peach in the summer to Pumpkin Pie in the fall, maintaining consistency across such a variety of products is no small feat. Arnold credits his team and the seasonal menu for keeping things fresh and authentic.
Advice for Aspiring Bakers and Entrepreneurs
Arnold’s advice for those looking to break into the baking world or any business? “When you select the type of business you want to go into, make sure there’s a market for it. Know your skill set and work with someone as dedicated as you are. And have tunnel vision toward your goal.”
From Broadway to baking, Arnold Wilkerson has proven that no matter the industry, passion, dedication, and creativity will always be key ingredients to success.
